Yes, I’m posting about salsa. Condiment posts are some of my favorite
So versatile! I used this salsa over grilled chicken, but it would work well with chips, over grilled salmon (YUM) or on a salad.
On a related note – this spring/summer I’m going to try as much as possible to use raw veggies and fruits for salads, salsas, and in dishes. There is something so satisfying and refreshing about the crisp cold crunch of a fresh veggie, so I can’t wait to try out some new things and share them with you!
Strawberry Mango Salsa
- 4-5 large strawberries, cleaned and chopped into small pieces
- 1 large ripe mango, chopped
- 1/2 red onion, diced
- small handful of cilantro, chopped
- 1 jalapeño, chopped fine
- zest of one lime
- juice of two limes
- 1 T extra virgin olive oil
- salt and pepper, to taste
Combine all ingredients, toss together, and let sit for about 30 minutes for the favors to meld.
Serve with chicken, salmon, chips, or on salads. Enjoy!!
