Summertime…and the Grillin’s Easy

I know, that was super corny. But I have to say – it’s true!! Ok so how many people hate coming home from a CRAAAAZY day (crazy with four “a”‘s – any less just wouldn’t be right) only to be asked, or wonder yourself “what’s for dinner?”? I know I do!!!! And I bet you do too. That’s why I’m going to give you my three go-to marinades today. I was just chatting with a friend and we were both commenting on how awesome it is to have some sort of grillable protein marinating, and veggies ready to go so that even if it takes twenty minutes, dinner can be ready with very little effort or brain power on any given weeknight.

So do this for me – actually – do this for yourself. On Sunday night, marinate three different kinds of meat in one of the marinades down below, in three, gallon sized plastic bags. Chicken, fish, pork, steaks, shrimp, scallops – whatever you want. Take three more plastic bags, and fill them with very roughly chopped up veggies – asparagus, mushrooms, onions, squash, peppers, eggplant, zucchini, tomatoes, shallots, garlic – anything goes. Toss that with olive oil, and salt and pepper.

Throw everything in the fridge. You now have dinner for three of your weeknights – DONE-ZO. Boom. How awesome are you??? Super awesome. Cuz I said so.

My Three Go-To Marinades (in no particular order of popularity!) I usually marinate four servings, so adjust the measurements accordingly for more or less.

#1: (great with chicken, fish)

  • 1/2 C extra virgin olive oil
  • 1 large handful cilantro, rough chopped
  • zest and juice of two limes
  • 1 red onion, sliced thin
  • 1 T sauce from chipotle peppers (or 1/2 chipotle pepper minced)
  • salt and pepper to taste (go for about 1/2 t each to start)

Throw all in a bag with the meat, and toss around. DONE.

#2: (great with pork, chicken, fish)

  • 1/2 C extra virgin olive oil
  • zest and juice of two lemons
  • 1 T dijon mustard
  • 2 T balsamic vinegar, or white balsamic vinegar
  • large handful parsley, roughly chopped
  • salt and pepper (about 1/2 t each to start)
  • 1/2 t crushed red pepper flakes

Throw all in a bag with the meat, and toss around. DONE.

#3: (great with pork and steak)

  • 1/2 C extra virgin olive oil
  • 3 T soy sauce
  • 1 T fish sauce
  • 1 inch chunk ginger, minced
  • 2 cloves garlic, minced
  • 3-4 scallions, chopped
  • 1/2 t crushed red pepper flakes
  • 1 t dijon mustard
  • salt and pepper (about 1/2 t each to start)

Throw all in a bag with the meat, and toss around. DONE.

Now go get preppin’. You’ll thank me later for sure.
